Greek Yogurt Souffles

And I’m back!!! So it’s been about 9 months or so since my last post and in those 9 months my life has changed SO much!  To sum it all up, I moved into a beautiful new house, got married, went on a honeymoon and got an adorable new puppy.  All wonderful, wonderful things!  Once we started the process of our move back in December, it was just too hard to keep up with my baking and the blog.  I have missed it though and decided to try and make a comeback.  I’m also thinking about blogging about other things in my life, like decorating my house!  I am hoping that this might help me actually get more done but we’ll see about that!  

Anyways, this is a recipe that I had saved from quite some time ago and just recently got around to trying out!  Part of the reason was actually because it requires ramekins and I didn’t have any! Once I finally got some (thanks to my Aunt Jan at my bridal shower) I was finally able to try it out.  I guess it could be considered “healthy” as far as desserts go.  There’s not much to it besides eggs and some sugar.  It was pretty delicious though and you could throw any fruits on that you’d like.  


– 1 cup plain greek yogurt
– 3 large eggs
– 3 Tbsp all-purpose flour
– 1/8 tsp salt
– 1 tsp vanilla extract
– 1/8 tsp cream of tarter
– 1/4 cup sugar
– butter and sugar to line ramekins


1. Preheat oven to 375 degrees and butter 6 ramekins and coat inside with sugar, knocking any excess out.  Set on a baking sheet.
2. In a mixing bowl, whisk together yogurt, egg yolks, salt, flour and vanilla and set aside.
3.  In another bowl, or in your stand mixer, beat the egg whites and cream of tarter on medium speed until foamy then gradually pour in the sugar.  Whisk until soft peaks form (this could take a few minutes.)
4.  Combine 1/3 of the egg white mixture with the yogurt mixture and mix well.  Then, carefully fold in another 1/3 of the egg white mixture, then the rest, trying to keep as much as the volume as possible.  
5.  Fill each ramekin with the mixture and put in the oven for 15 minutes, or until they are risen and edges are golden brown.
6. Top with fruit of choice (or not) and serve immediately!
