I love oatmeal raisin cookies. Especially when they are just a little bit underdone and are still super soft and chewy. For some reason, I don’t feel as guilty eating cookies with oats and raisins in them. I know these are just as high in calories and sugar as chocolate chip cookies but I’ll lie to myself if it means I get to eat these Chewy Oatmeal Raisin Cookies.
They are so easy to make and the recipe makes quite a lot, so you can easily freeze some of the dough rolled out into balls and placed in an airtight container for a few weeks. That way you can just pop a few out when you are craving some more, which believe me, will happen!
– 2 cups all-purpose flour
– 1 tsp baking soda
– 1 tsp baking powder
– 1 tsp salt
– 1 cup butter, softened
– 1 cup sugar
– 1 cup brown sugar
– 2 eggs
– 2 tsp vanilla
– 3 cups old-fashioned oats
– 1 1/2 cups raisins
1. Preheat oven to 350 degrees and line or spray a cookie sheet.
2. Whisk together the flour, baking soda, baking powder, and salt in a medium bowl and set aside.
3. Cream together butter, sugar, brown sugar, eggs and vanilla in a large bowl.
4. Slowly add dry ingredients to wet ingredients and stir to combine. Be careful not to over mix.
5. Stir in oats and raisin.
6. Scoop about 2 tbsp of dough out at a time and form into a ball, then drop on cookie sheet. Place dough about 2 inches apart.
7. bake for 11-13 minutes, or until slightly golden brown on edges.
8. Let cool on cookie sheet for about 2 minutes before moving to a rack to cool.
